Because even though beauty is also skin deep, from the point of view of first impressions, the first thing you're going to see and think about is how a person looks, so its important in that sense.

We're hardwired to reproduce, so there have to be ways of singling out the best mate. Without physical attraction, people would feel no need to approach someone to try and form a relationship. We'd all die out.
It's nature, it's in all species. If cockroaches were pink and fluffy we'd love them.
Nature makes it that we want the best/healthiest offspring and it therefore makes us attracted to the best looking/healthiest ones for a partner.
